Here’s my weekly post sharing about what’s going on in the world of RecipeGirl, as well as some fun links to things I’ve come across lately. So here it goes: following are 10 things to share with you this week- everything from recipes to shopping to a few fun articles and more. There are a few affiliate links included here and there. Cinco de Mayo is a good reason to Make Mexican Food for dinner!!
- Shrimp Ceviche is an easy-to-make Mexican ceviche recipe that makes a great appetizer.

- San Diego Style Fish Tacos are just like the tacos you enjoy when you visit Southern California taco shops!
- Salsa Verde Chicken Enchiladas are the best green chicken enchiladas with two kinds of cheeses and a delicious filling too.
- This delicious recipe for pork Carnitas is an easy one made in the slow cooker.
- Margarita Cake recipe is the best! It’s a super light and refreshing snack cake with great lemon-lime flavor.
Fun Shopping Finds:
- Everyone I know is obsessed with ON sneakers. I have had the ON running shoes for a while now, but I wanted to get some less clunky ON sneakers for travel. The Cloud 5 ON sneakers are perfect. They’re “no tie,” so they’re easy to slip into. I sized up 1/2 size on these shoes. It says they are running shoes, but I think they’re great for walking. They’re not clunky at all. And there are a ton of colors to choose from.
- I’ve been looking at this cute summer dress for a while, and I’m glad I finally pulled the trigger. It fits perfectly (true to size), and the color is lovely too.
- This ruffled tank top is adorable in the green color.
- These linen pants are so cute for summer (cheap!)
- What a gorgeous, bright summer top!
- My big, giant, stressful, “should I spend the money on this?” purchase lately was this purse. I just thought it looked so cute for summer, and it was perfect for an outfit that I have to wear to a country club event at my son’s graduation in May. And I’m so glad I bought it. I LOVE IT. And then I found out that there are matching shoes!!! Of course, I’m considering those too.
- And finally, I also got these TOM’s shoes. Again, they are so comfortable, the price is right, and they are light and easy for travel. I got them in the black lace, and they are so, so cute!

What I’m watching and reading:
- I tried to watch Rob Lowe’s new series on Netflix: Unstable. I wanted to like it. He and his son wrote and produced it and star in it together. It was just sort of too silly at times, and I wasn’t able to finish it.
- I’m in-between books right now, and it looks like it will be several weeks before my next book is delivered on my Libby app. So I’m listening to podcasts until then. There are a couple of good interviews on Smartless with Ben Affleck and Rob Lowe.
Fun Recipes I’ve spotted on the internet this week:
- These Blueberry Muffins with Lemon Glaze are looking very tasty!
- I must make these White Chicken Enchiladas sometime soon. Yum!
- I need a Boozy Creamsicle Float in my life.
Here’s what’s going on in my life:
- I’m still on my cruise (currently in Istanbul, Turkey). I can’t wait to share all about it later!
- A lot of people have asked how I lost 20+ pounds (in the last 3 months). I knew I had to get some weight off and I needed a jump start. So I started by following the Optavia Diet. The premise is that they send you a bunch of snacks. You eat four of those snacks every 2.5 hours four times per day. And you supplement with two high protein and veggie meals. I didn’t like the Optavia food at all, so I followed it for a couple of weeks to get started, and then I learned that I could do a similar program on my own without buying the sub-par food. Most of the four “fuelings” throughout the day are about 100 calories with two higher calorie meals when you eat your protein/veggies/fats. I exercise a lot, so I always add eggs, light cheese sticks and nuts to my day. I’m still at it, and I’m still losing (though the cruise will set me back a bit, I’m sure!) I avoided going out to dinner in the beginning (and didn’t drink alcohol for the first month). But now I do enjoy a dinner out and the occasional glass of wine or two. I’m just really disciplined on most days of the week. I’m the lowest weight I’ve been in years (lower than the number on my driver’s license!) I feel great, most of my clothes are too big, and it’s been fun to do some shopping for smaller sized clothes. That’s about it. Let me know if you have any questions! It’s not easy! Especially when you cook, photograph and write about food!

- New cookbook release > I’ll Bring the Cake: Recipes for Every Season and Every Occasion by Baking with Blondie blogger Mandy Merriman. All of the cake recipes in this book start with a cake mix, and then flavorful ingredients and pretty decorations turn them into beautiful cakes. I’m okay with doctored-up cake mixes, so this is definitely a book for me.
- Reeses is releasing crunchy and creamy versions of its peanut butter cups. Are you Team Creamy or Team Crunchy? I’ll go for the crunch!
- I’m just hearing about Vodka Butter. Would you try it??
- Here are some expert hydration tips for summer.
Products I’m loving:
- My son moved into a new apartment, so I sent him a highly recommended Air Fryer as a house-warming gift– along with an oil sprayer.
- I don’t know where I would put this rug (maybe a play room?) but I think it’s darling.
- Look for Coconut Body Butter at Trader Joe’s. It feels luxurious on your skin!
- These Melamine Watermelon Bowls are so perfect for summer entertaining.
- I think this designer Pickleball Paddle is a great Mother’s Day gift for the Mom who plays Pickleball!
- Spotted at Walmart: Caramel Cold Brew M&M’s. I haven’t tried them yet, but they sound delicious!
- This is the best makeup brush for applying powder or bronzer.
Bake some bread pudding this week!
- Classic Bread Pudding is a recipe that everyone should have in their collection!
- Cinnamon Caramel Bread Pudding is elegant enough to serve as dessert at a fancy dinner party, but it’s also easy enough to make and serve to the family.
- Chocolate Bread Pudding is a delicious custard bread pudding topped with toasted walnuts and whipped cream.
