Baked cranberry oatmeal makes for a great healthy start to your day. This easy to make delicious breakfast is naturally sweetened and can be made ahead too!

With Christmas just around the corner I though we could start off this years Christmas recipes with this excellent baked cranberry oatmeal!

This is a quick to make baked oatmeal breakfast with a delicious sweet taste and a fantastic aroma of cinnamon.

Its very similar to my baked apple and cinnamon oats recipe that I posted just over a year ago.

Lady Lynne and I have been enjoying that ever since!

Sometimes its wonderful to just wake up to the delicious amazing aroma of a baked oatmeal breakfast.

It makes you forget all about the nasty weather outside and just concentrate on all thats good!

Its great for Christmas but as its made with dried cranberries it can be made all year round too.

I dont know about you but I often find fresh cranberries difficult to get at any other time. So I stuck with dried canberries, although you could of course use fresh cranberries!

The inspiration for this baked oatmeal breakfast came about when I was searching for a festive baked cranberry Christmas breakfast.

I couldnt find one easy enough to make on Google so I decided to make up my own.

My recipes are always as simple as possible.

Please feel free to add any extra ingredients you might like such as some nuts or seeds into the bake to give it an added crunch.

Baked Cranberry Oatmeal Recipe

You can put this baked cranberry oatmeal together in 10 minutes. Then pop it into the fridge until the morning. Itll only take a further 20 minutes to bake.

Or you could even prep and bake this the night before. Then serve it in bowls reheated in the microwave in the morning. Nice and easy!

Baked Cranberry Oatmeal

Baked cranberry oatmeal makes for a great healthy start to your day. This easy to make delicious breakfast is naturally sweetened and can be made ahead too!

  • Cooking spray oil
  • 100 g porridge oats
  • 100 g dried cranberries
  • 1 tsp cinnamon
  • 100 ml fat free Greek yogurt
  • 100 ml skimmed milk
  • 2 tbsp honey
  • 1 large egg whisked
  1. Preheat oven to 180C Fan.
  2. Using the cooking oil spray, lightly grease a small oven proof casserole dish.
  3. Mix the oats, cranberries and cinnamon in a bowl.
  4. In a separate bowl whisk together the yogurt, milk, honey and egg.
  5. Pour the milky liquid mixture into the bowl with the oats, mix well then spoon into the greased casserole dish.
  6. Place the casserole dish into the centre of the oven and bake for 15 20 minutes until the top is slightly golden and crisped.
  7. Serve in bowls broken up with a little more honey and milk if required.
