Power up your day with these {Gluten Free} Sweet Spinach Muffins!
I did it again…I went to the store and bought a ridiculous amount of spinach with the intention of using it up immediately. Little did I know, soon after that trip my entire family would get sick, including myself. Which resulted in me laying around, not wanting to cook.
Long story short, the spinach sat in my refrigerator for a few days. Out of sight, out of mind.
But if you ask anyone that knows me well, they will tell you I HATE to waste food. So before the spinach went bad, I decided to whip up a batch of my {Gluten Free} Sweet Spinach Muffins. These little guys are naturally sweetened, perfectly soft and insanely addicting. You would have no idea they are full of healthy spinach! (PS- all of my kids devour them!)
WHAT INGREDIENTS DO I NEED FOR SWEET SPINACH MUFFINS?
- 2 cups gluten free flour (You can always use regular flour as well. I have done both.)
- 2 tsp cinnamon
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup Vanilla Almond Milk- reduced sugar
- 3 cups fresh spinach
- 1 banana
- 1/3 cup coconut oil
- 1 egg
- 1 tsp vanilla
- 1/3 cup honey
HOW DO I MAKE SWEET SPINACH MUFFINS?
STEP 1: Start by preheating your oven to 350 degrees F.
STEP 2: In a blender or food processor, blend together 1 banana with 1 cup of Vanilla Almond Milk, 3 cups of fresh spinach, 1/3 cup of melted coconut oil, 1/3 cup honey, 1 egg and 1 tsp vanilla.
STEP 3: In a large bowl, combine the following dry ingredients: 2 cups gluten free flour, 2 tsp cinnamon, 2 tsp baking powder, 1/2 tsp baking soda and 1/4 tsp salt.
STEP 4: Slowly combine the wet and dry ingredients. (I used a whisk for this, no need for a large mixer).
STEP 5: Once all the ingredients are mixed, pour the batter into a prepared muffin tin and bake for approximately 18-20 minutes. (If you are using mini-muffins, they should only take about 10 minutes).
Just one bite and you will be hooked. These {Gluten Free} Sweet Spinach Muffins are soft, fluffy and a perfectly sneaky way to get your kids to eat their veggies.

Ingredients

- Remove from oven and let cool.
