There is nothing I like more than incorporating fruits and vegetables into my baking. I absolutely love the idea of healthy eating. Especially when this eating involves some of the most important food groups accompanied by a sweet delicious taste! This chocolate walnut banana sweet potato bread loaf (and a couple of muffins) is honestly the perfect breakfast, snack, or even dessert staple. This gluten-free, dairy-free, sugar-free treat is super simple, easy, and relatively quick to make! Hope you enjoy it as much as I (and my entire family did)
Ingredients
(wet)
2 mashed ripe bananas 🍌
1 medium sweet potato (steam first, let cool, and peel) 🍠
1/4 cup applesauce 🍎
1 tsp vanilla extract 🍦
6 tbsp maple syrup 🍁
(dry)
1 1/2 cup oat flour 🌾 (can be easily made by roasting Old-fashioned Oats in the oven at 325F for about 20 mins (or until brown) followed by a spin in the blender under oats are a powdery texture)
2 1/2 tsp cinnamon 🍂
1/4 tsp cloves 🍀
1/4 tsp nutmeg 🌰
1/4 tsp salt 🧂
1 tsp baking soda
1 tsp baking powder
1/4 cup walnuts 🥜
Handful of chocolate chips (I made my own by mixing coconut oil, cacao powder, and @beachbody chocolate protein powder and letting that freeze overnight until taking it out the next day and chopping it up into tiny pieces!)🍫
add wet ingredients into a blender and blend until a smooth consistency. Add dry ingredients except the walnuts and chocolate chips and blend until all is combined.
Transfer batter into a loaf pan adding and stirring in chocolate chips and walnuts consistently

Bake that baby for 30-35 mins or until brown/desired brownness
