Peanut Butter Banana Granola Bars

My family is a big fan of quick, easy, on-the-go treats. However, we are not big fans of all the extra sugars, dyes, and artificial ingredients added to many store bought snacks. My almost-two-year-old is a big fan of peanut butter banana clif bars, but the price tag makes these a rare treat. This is what started my quest to come up with a good, homemade substitute!

After much trial and error, I’ve finally found the right combination for a tasty peanut butter banana granola bar. I feel even better feeding these to my family because I know exactly what is in them. They are a good source of protein and fiber and have no extra fillers, corn syrup, or fake flavors.

Perhaps the best thing about these granola bars is how quick and easy they are to make! I am a busy full time mom and full time PA, but this recipe requires such little time that I am able to throw a batch together almost every week!

Without further ado, here is the recipe!

Ingredients:

  • 4 cups dry oatmeal
  • 1 cup Rice Krispie cereal
  • 1 cup packed brown sugar
  • 1/2 teaspoon salt
  • 3/4 cup melted butter (1 1/2 sticks)
  • 2/3 cup honey
  • 1/3 cup whole trilogy health seeds (flax, chia, hemp combo)
  • 1/2 cup PB Fit powder
  • 1 teaspoon vanilla
  • 2 bananas mashed
  • 1 cup mini chocolate chips (we use semi-sweet)

Step #1

Combine dry oatmeal, Rice Krispies, brown sugar, salt, PB Fit powder, and flax/chia/hemp seeds into a large bowl

Step #2

Melt butter in a microwave safe container. Add honey, vanilla, and mashed bananas, mixing thoroughly.

Step #3

Add wet mixture into large bowl containing dry mixture. Mix thoroughly until everything is evenly coated.

Step #4

Add in chocolate chips and stir to combine.

Step #5

Press mixture into a well greased 9x13in pan.

Step #6

Bake at 450º for 10 minutes. Cool before cutting and removing from pan.

Enjoy! These bars don’t have any temperature-sensitive ingredients in them, however, my husband likes to keep them in the fridge and eat them cold. I hope this recipe becomes a favorite in your house as it has in mine!
