So heres the damn recipe:
(Ill save all my bullshirt for the end)
Preheat oven to 350
Mash 4 ripe bananas* in a bowl. (very ripe for best results)**
Melt and cool 1/3 C butter.
Mix together.
Stir in 1 egg, 1 t vanilla, 2/3 C sugar.
Next, add in 1 t baking soda, 1 1/2 C flour, and a pinch of salt.
Stir until just combined.
Fold in 1 C chocolate chips.
Grease muffin pan well. Do not use liners. They will stick. Makes 12 muffins.
Bake for 18-20 min or until toothpick comes clean.
*You can sneak in a half cup to 1 cup of pureed zucchini, minus 1 banana
**Frugal tips:
Dont waste money and throw away bad bananas- use them for baking! If you dont have enough or the time simply peel and freeze.
Dont have any? My grocery store sells huge bags of ripe and ready bananas for .99 cents! Stock up and make a double or triple batch!
You can freeze the muffins layed flat in a gallon ziploc. Place a piece of parchment or wax paper on the bottom and top between the muffins and the bag to prevent sticking.
Note on my recipe: I hate the way recipes are written. Like, idk if its my Type B personality or what, but instead of listing all the ingredients, then the directions, and making me go back and forth 12 times, I just need you to put it all together! Hence, why mine is written so beautifully for you all!
