
I’m once again on the path of healthy recipes. I guess I don’t usually stray from healthy food but now that I have a second kid to feed I’m looking for more cost-effective ways to get veggies in our diet.
Gotta keep the nutrients going in! Growing healthy kids starts with healthy diets. When things taste good they are more likely to be eaten. So I made a batch of spinach muffins!
You wouldn’t know these have spinach in them except for their green colour. They taste just like a normal banana muffin but are packed with spinach power!

My toddler loves them. I had to put a cap on how many he could eat at once. Baby B gobbles them up too, although he’s less picky than E is. It can be hit and miss with toddlers so I’m always glad when there’s something healthy he can snack on.
Unfortunately my husband wouldn’t touch them (muffins shouldn’t be green according to him). I couldn’t convince him otherwise but I guess that just means more for the rest of us!
These muffins are easy to make and pack a punch with 2 cups of spinach in the batch. I reduced the sugar and don’t add salt so if you prefer a sweeter muffin, increase the sugar by a 1/4 cup.
You will need a blender to create a sort of smoothie with the spinach, banana, egg, vanilla and milk. Then add the mixture to your dry ingredients. It comes together fast and isn’t labour intensive, which is my favourite kind of recipe!
So when you need to add some veggies to your diet (or your kids’ diet), we highly recommend these! Comfort food with some of your daily vegetable requirements. Give them a whirl!
Banana Spinach Muffins
Original recipe from Twin Mom Refreshed
Makes 15 Muffins
Directions
- 2 1/2 cups whole wheat flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/2 cup sugar
- 1 egg
- 3/4 cup milk
- 1/4 cup oil (canola or melted coconut)
- 1 tsp vanilla
- 2 cups fresh spinach
- 2 ripe bananas
- Chocolate chips (optional)
Directions
- Preheat oven to 350°F. Line a muffin tray with 15 liners.
- Combine dry ingredients (flour, baking powder, baking soda, cinnamon and sugar) in a large mixing bowl.
- Use a blender to mix egg, milk, oil, vanilla, spinach and banana until smooth.
- Add wet ingredients to the bowl with dry ingredients and stir to combine. Fold in chocolate chips (if using).
- Spoon into muffin tins, about 2/3 full. Bake for 16-18 minutes or until done.
- Let cool for a few minutes before removing from muffin tins.
- Enjoy!
