I don’t have many kitchen gadgets, but this waffle maker is great for kids who might be a little more selective with their food preferences. I often make these waffles on a Sunday morning and keep some of the batter aside in the fridge so I quickly cook another batch on Monday morning before the boys head out the door to school. They make a great filling breakfast. Serve with ricotta and honey, lemon juice and butter, maple syrup and berries, banana, Greek yoghurt, or any topping you like. You can also separate them into quarters and add them to the lunch box.
Ingredients: 2 cups wholemeal flour 1/2 cup LSA or ground flaxseeds or ground pumpkin seeds 2 Tab white sugar 3/4 teaspoon baking soda 2 cups milk 4 eggs 1 teaspoon vanilla extract 2/3 cup vegetable oil Method: Place all ingredients into a blender and blend until well combined. The mixture will be quite runny which is how it's supposed to be. Cook in your waffle maker.
