Oil & Refined Sugar Free Vegan Chocolate Chip Banana Bread

  • 1 3/4 cups whole wheat flour (or a GF flour of your choice)
  • 1/2 cup chocolate chips of your choice (I used Lilys brand stevia sweetened chocolate chips)
  • 1/3 cup date sugar (I bought it online, however you may find it at a health food store this may be subbed with regular cane sugar but I suggest using date sugar as a healthy, WFPB sweetener)
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/3 cup applesauce
  • 1 tsp vanilla extract
  • 3 large overripe bananas (or 4 small overripe bananas)
  1. Preheat oven to 350 degrees Fahrenheit
  2. In a medium sized mixing bowl, add flour, chocolate chips, date sugar, baking powder, and salt, then mix well
  3. In a separate large sized bowl, add bananas, vanilla extract, and applesauce
  4. Mash banana mixture thoroughly until it is creamy and most lumps are gone
  5. Add dry ingredients to the wet ingredients, mix until combined, making sure to not over-mix
  6. Pour batter into a greased or parchment paper lined loaf pan
  7. Bake in the oven for 50 minutes
  8. Let cool for 10 minutes before serving
