Make This Cocktail: Knickerbocker

I still had raspberry syrup sitting in the refrigerator from the Clover Club, so it was fate that the July/August issue of Imbibe magazine included a feature about other cocktails that include the syrup in their lineups. Here’s the first entry.

The Knickerbocker cocktail has been around the mid-1800s; it appeared in a bar guide as early as in 1862. That would sync well with the clothing this drink is named after — knickerbockers were full or baggy pants that were gathered at the knee, usually fastened with a button, that started out as men’s clothing but moved into women’s sportswear as well.

Apparently the name came from a book that Washington Irving wrote back in 1809 under the pseudonym Knickerbocker, a name that referred to the Dutch immigrants at the time and the clothing they wore. The shortened version of the word, knickers, of course eventally also led to the New York Knicks.

Knickerbocker

Ingredients:
  • 2 ounces aged rum
  • 1 ounce fresh lime juice
  • ½ ounce curaçao or triple sec
  • ½ ounce raspberry syrup
Instructions:
  1. Shake all ingredients with ice until well-chilled.
  2. Strain into a goblet or wine glass filled with crushed ice. Garnish with a lime twist.
